Triple mushroom burger


It has been a long cold winter here in Rochester. My sister Lynn has quite the sense of humor and decided to throw a summer picnic with all the fixings,  hamburgers, potato salad, baked beans, tomato and cucumber salad, you get the general idea. My niece Anne requested a vegetarian burger, after much research I found most mushroom burgers were the same. Enter the triple mushroom burger! It was a hit!

4 portabello mushroom gills removed marinated in 1/3 cup of your favorite balsamic vinaigrette   (I use a calorie free version from Wegman”s) for an hour or two.

4  portabello mushrooms gills removed $5.00

2 tablespoons finely diced onions $.15

3 cloves garlic free,thanks Lynn

6 button mushrooms $.50

6 baby bello mushrooms .$.50

1 fire roasted red pepper $.50

Saute onions and garlic til tender add diced mushrooms and roasted red pepper. Cook till tender. Let cook sllightly

2 eggs beaten

2 tablespoons panko bread crumbs

2 ounces swiss cheese shredded

1 slide whole grain bread crumbled

In a medium bowl combine the eggs, breads, cheese and salt and pepper. When the mushroom mixture has cooled a bit add to the egg mixture. Stuff the large mushrooms with the mixture. Bake at 350 for 30 minutes and enjoy.

This can be served on a bun or just by it self. This burger has 184 calories, 4 grams fiber (15%) and 13 grams protein (25%).
